The Pago de Cirsus Winery grows all its grapes and bottles all its wines on the property, where the Ebro River, the Cierzo and the Moncayo mountains provide exceptional value. The land, the microclimate, the varieties, the production method and aging come together to produce a special character and personality that is reflected in each bottle.

In 2014, Pago de Cirsus received the Denominación de Origen Protegida Pago (D.O.P Pago) qualification. From that date on, our wines have been prepared under the D.O.P. Pago Bolandin.

Syrah, Tempranillo. 14 months in new French oak barrels. Dark cherry colour with a garnet rim. Aromas of ripe fruit, wood, balsamic. Well structured, elegant and balanced. A clear reflection of the vineyard’s character. One of our winery’s most celebrated wines. D.O.P. Pago Bolandin.

Serving temperature: between 15 and 17 Celsius degrees

Harvesting: Manually, into 15kg boxes organised by plot and variety.
Maceration: Cold pre-fermentation at 5ºC for 24 hours.
Production and aging: Fermentation in French oak vats followed by 14 months in new French oak barrels.

TASTING NOTES:

Appearance: Medium cherry red colour, high concentration.

Nose: Diverse and intriguing. Red berries, blueberries, blackberries and chocolate.

On the palate: Well-structured, elegant, balanced, with sweet tannins that blend perfectly with its lively acidity; aromas of cherry, balsam, walnut and sweet spices. Enveloping, rich and smooth, with tannins. An intense and expressive Syrah.

Food pairings: Roasted red meat, roasted game and poultry, moderately mature cheeses.
